Trattoria Guaiana is a convivial, participatory cuisine and table to explore what it tastes, looks and feels like to live in a society where tradition is no longer used for ‘othering’ people and, instead, it learns from every voice that contributes to its reality.

Inspired by the story of the “Guaiana Toscana”, the failed Medici colonial project in the region now known as French Guyana in 1608, and the story of the six Tupì natives that travelled to Florence, never to return home; Trattoria Guaiana is designed to challenge the traditional notion of Italian identity and ‘tradition’ through convivial, immersive, dialogic & sensorial experiences.

Throughout a 7 days program, the Trattoria will host dinners, conversational afternoons and morning cooking sessions with artist Niccolò Moronato and chef Prince Asford, alongside research partner Alice Jasmine Crippa and invited guests.
